Creamy Potato Soup with Bacon

Ultimate BLT

Serves 2
Ingredients

1/2 package thick cut Kayem Maplewood bacon

4 slices thick sandwich bread of choice

1 large ripe tomato, sliced

Several large lettuce leaves of choice

1 medium ripe avocado, sliced

1/2 cup mayonnaise

2 tbsp mustard

2 tbsp sour cream

Directions
  • Preheat oven to 400˚F. Place bacon on a foil-lined baking sheet. Bake 15 to 20 minutes or until browned and crisp. Transfer to a paper towel-lined plate to cool. Arrange the slices of bread on a cutting board and spread some of the sauce over each toast. Layer lettuce, tomato, avocado and bacon. Cut in half and serve.
  • Toast bread slices in a toaster or grill on a pan with butter. Set aside.
  • In a small bowl combine mayonnaise, mustard and sour cream then set aside.
  • Arrange the slices of bread on a cutting board and spread some of the sauce over each toast. Layer lettuce, tomato, avocado and bacon. Cut in half and serve.
